Chicken Cacciatore

Episode Recipe: Chicken Cacciatore
Ingredients:
2 Medium Chicken Thighs with Legs attached cut into 2 pieces
3 Peppers cut into chunks ( Feel free to use different colored peppers)
1 Large Onion or 4 Green Onions
4 Large Tomatoes (any variety)
1 tsp (or to taste) each of Italian Spices – Oregano, Basil, Thyme
1/2 tsp each (or to taste) Paprika, Turmeric, Cinnamon
1 tsp each (or to taste) Lemon Pepper and Salt
Directions:
In large pan, brown chicken for approximately 10 minutes and then set aside.
In the same pan, slowly saute the rest of the ingredients for 10 minutes.
Return chicken to pan and simmer on medium heat for 20 minutes.
Serve over Rice or Pasta..
