One Pot Dinner
As Featured on Episode 202 of Herndon Farmer’s Market with Tooran K. Shadmand
Water buffalo meat was provided by Breezy Meadow Farms and the onion was donated by McCleaf’s Orchard.
Episode Recipe: One Pot Dinner
Ingredients:
1 lb Ground Meat
1 medium Onion Chopped Fine
2 Fresh Medium Tomatoes Diced or 8 oz diced tomaots
2 Chopped Celery ribs
8 oz cooked Black Beans or 1 cup dry beans
2 Cups Basmati Rice (soaked) & washed
1 tsp Turmeric
1 tsp Paprika
1/4 tsp Cinnamon
1/4 tsp Garlic Powder
red pepper (to taste)
kosher salt (to taste)
1 tsp chilli powder
Directions:
1.Prepare dry beans by boiling until tender, drain and set aside to add to pot later
2. Wash Basmati Rice and soak for an hour and set aside to add to pot later.
3. Saute meat with onions in rice cooker
4. After meat is cooked, add diced tomatoes, cooked black beans, celery
5. Add turmeric, paprika, cinnamon, garlic powder, red pepper, chilli powder and kosher salt
6. Mix ingredients
7. Add water and olive oil
8. Add rice
If you are not using an electronic rice cooker, cover pot with lid and cook for about 40 minutes on low heat or until rice is done.
